Strawberry & chia breakfast bowl


Breakfast is my absolute favourite meal of the day. Oats, crunchy or soft; fruit, dried or fresh; nuts, whole or buttered…. Its all the best foods rolled into one meal! And the things you can do with them are limitless. Yet, getting up at 6am and leaving an hour later every day has caused me to fall deep down into a  very dark muesli rut. When you’re working you need breakfasts which are filling and fast. So yesterday I decided to mix things up  by whipping up some super easy chia puddings the night before.
Chia pudding is so easy, just mix a few ingredients up and leave those babies to work their magic overnight, job done. And in the morning you can add as much or as little to it as you like, depending on how inspired you are feeling that early in the morning, (me, I like a healthy ratio of about 7:1 topping to base). Nut butters, berries, banana slices, seeds, coconut, raisins, dates, almonds… the list is endless.
You can sub nearly everything in this recipe apart from the chia seeds (pretty integral), and the oats are optional, I just like to bulk mine out a bit.
1/2 cup strawberries
2 tbsp chia seeds
2 tbsp oats
1 cup plant milk, I like almond
1 tsp vanilla essence (optional)
1. Slice the strawberries and lightly mash with a fork until soft but still chunky.
2. Add the chia seeds, oats, vanilla and milk and mix thoroughly.
3. Chill overnight or for minimum 1 hour.
